Starbucks cinnamon swirls

Method

  1. In a large bowl add the flour, salt, baking powder, yeast, Granulated white sugar and mix
  2. Add the milk and mix well followed immediately by 75g butter, eggs and work together
  3. Knead the dough for 5 mins into a large non-sticky ball using flour coated hands
  4. Put the bowl in a warm place, cover and let rise for approx. 1 hr or until the dough has doubled in size
  5. Roll out the dough on a lightly floured surface, until it forms a rectangle of approx. 40cm by 30 cm (should be about just under 1cm thick)
  6. Preheat the oven to 200c and prepare the oven trays with baking paper
  7. Spread a layer of butter across the rolled out dough and then sprinkle a thick layer of powdered brown sugar over the butter, then sprinkle liberally with cinnamon
  8. Then sprinkle the chosen dried fruit across the dough covering liberally
  9. Working carefully, from the long edge, roll the dough into a long, rolled up tube
  10. Cut the dough tube into 3cm slices and place whole slice on a baking tray (all expansion room around)
  11. Place the trays in to near the middle of the oven and cook for 12mins then watch and remove once expanded and golden
  12. Remove trays and allow to cool
  13. Cream together  175g butter, cream cheese, 1 teaspoon of vanilla till mixed and fluffy
  14. Mix in 300g powdered icing sugar until icing is smooth. For thicker add icing sugar, to thin add a little milk (1 tablespoon at a time). Once consistancy is achieved then spread over the cooling swirls
  15. Leave for 30 mins then enjoy
