- 2 full width oven trays (Approx. 18 swirls)
Ingredients
- 14g Dried yeast
- 600g Flour
- 150ml Warm milk
- 1 Packet (200-300g) of raisons or sultanas
- 200g Granulated white sugar
- 1 Teaspoon vanilla
- 250g Warm butter
- 250g Approx. Dark brown sugar (fine)
- 5-10 Approx. Large tablespoons of cinnamon
- 2 Eggs beaten
- 2 Teaspoons of baking powder
- 1 Teaspoon salt
- 150g Cream cheese
- 300-400g Powdered icing sugar
Method
- In a large bowl add the flour, salt, baking powder, yeast, Granulated white sugar and mix
- Add the milk and mix well followed immediately by 75g butter, eggs and work together
- Knead the dough for 5 mins into a large non-sticky ball using flour coated hands
- Put the bowl in a warm place, cover and let rise for approx. 1 hr or until the dough has doubled in size
- Roll out the dough on a lightly floured surface, until it forms a rectangle of approx. 40cm by 30 cm (should be about just under 1cm thick)
- Preheat the oven to 200c and prepare the oven trays with baking paper
- Spread a layer of butter across the rolled out dough and then sprinkle a thick layer of powdered brown sugar over the butter, then sprinkle liberally with cinnamon
- Then sprinkle the chosen dried fruit across the dough covering liberally
- Working carefully, from the long edge, roll the dough into a long, rolled up tube
- Cut the dough tube into 3cm slices and place whole slice on a baking tray (all expansion room around)
- Place the trays in to near the middle of the oven and cook for 12mins then watch and remove once expanded and golden
- Remove trays and allow to cool
- Cream together 175g butter, cream cheese, 1 teaspoon of vanilla till mixed and fluffy
- Mix in 300g powdered icing sugar until icing is smooth. For thicker add icing sugar, to thin add a little milk (1 tablespoon at a time). Once consistancy is achieved then spread over the cooling swirls
- Leave for 30 mins then enjoy
